Honey Glazed Banana Bread

I whipped this recipe for honey glazed banana bread up on a rainy, grey day with two browning bananas sitting on the counter. Kenneth was immersed in the Xbox, and I'd run out of episodes of Catfish... so what else does one do on a rainy day? (The answer for me should've been working on Atlas Magazine, but shhh. This tasted better.)

This combines flavors that I'd neglected for way too long in life. I've had an unspecified vendetta with banana bread for most of my life and have only come around to embracing it in the last couple of years. As for honey... I'd just always opted for peanut butter on my toast. Who knew honey could be such a game-changer in so many ways? Not only are there health benefits, but honey itself is just straight up delicious. Thus, this banana bread with a honey glaze was born.

This recipe doesn't take too long to prepare and has a super easy cleanup. It's dense and flavorful without the taste of banana being too overpowering. The honey glaze is a sweet balance to the heavy flavors of the bread.

Notes

– I used a Williams Sonoma Nonstick Loaf Pan.

Honey Glazed Banana Bread
A simple banana bread recipe with a dreamy honey glaze.
Banana Bread
  • 2 very ripe bananas, peeled
  • 5 tbsp unsalted butter, melted
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 3/4 cup light brown sugar
  • 1 large egg, beaten
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
Honey Glaze
  • 1/2 cup confectioner's sugar
  • 2 tbsp honey
  • 1 tbsp unsalted butter, softened
  • 1 1/2 tsp milk
Instructions
1. Preheat oven to 350ºF and butter/grease a 4x8" loaf pan. 2. Mash ripe bananas in a mixing bowl until small pieces, then use a mixer to mix until smooth. 3. Add melted butter into the smooth bananas. 4. Add baking soda, salt, cinnamon until well-mixed. 5. Mix in the brown sugar, beaten egg and vanilla extract. 6. Add all-purpose flour in 2 parts until well combined. 7. Pour batter into loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean. 8. Let cool in pan before removing and cooling completely. 9. Add glaze once completely cool.
