Winter Wonderland Cake Pops

The holidays may have passed, but I'm still all about those wintery vibes. Is there any better way to hide from the outdoors than to bake, eat and repeat?

This cake pop recipe has a birthday cake base. I used colorful sprinkles on the inside, but for a more "wintery" look you can use blue sprinkles.

There are two ways to make cake pops: with a mold, and hand-rolled. This recipe uses a mold, but you can choose to bake the cake in a pan and hand-roll the pops with icing as a binder–– but I'll save that for another day.

– I used Wilton Candy Melts in blue.
– I used Wilton Lollipop Sticks.

Winter Wonderland Cake Pops
A quick one-batch cake pop recipe using a mold.
Ingredients
  • 4 tbsp, softened to room temperature unsalted butter
  • 1/3 cup + 2 tbsp granulated sugar
  • 1 egg white
  • 1 tsp vanilla extract
  • 2/3 cup all-purpose flour
  • 1 TSP baking powder
  • 1/4 tsp salt
  • 1/3 cup + 1 tbsp whole milk
  • 2 tbsp + extra for decorating sprinkles
  • 1 bag candy melts
Instructions
1. Preheat the oven to 350ºF.2. Mix together the butter and sugar until fluffy.3. Add vanilla and egg white until well combined.4. Whisk together dry ingredients, then beat into wet mixture until just combined.5. Add milk and mix until smooth –– do not over-mix.6. Add sprinkles to the batter.7. Spoon the batter into the cake pop mold and fill each mold. Fill the side of the mold without holes!8. Place the molds on a flat baking pan with the hole side up and bake for 15 minutes.9. Let the cake pops cool before popping them out of the mold. They should be easy to remove.Optional: Place them in the freezer for 15 minutes as it will make the pops a bit easier to decorate.10. Melt the candy melts in the microwave for 30 second intervals, stirring each time.11. Dip the lollipop sticks into the candy melts and insert into the cake pops. Only insert them a small way in or they’ll fall apart when you dip.12. Let them sit for a moment before you dip the rest of the pop. Make sure the candy melts are thoroughly melted or they’ll stick and fall apart.13. Sprinkle as desired, and let dry.
