Peanut Butter & Honey Blondies with Dark Chocolate

I have to admit, I don't think I've ever taken a good photo of brownies or blondies. They're not a particularly cute dessert to photograph –– they can be crumby, misshapen... or maybe it's just me. I don't sweat it though because regardless of whether a dessert is pretty, the question is: is it edible (and how soon may I devour it?)

During the "bomb cyclone" snowstorm, I essentially locked myself in the house for a few days until it went away. Don't get me wrong, I love snow. But when a snowstorm is branded in such a manner... I think I'm good to stay home and bake.

This simple recipe takes blondies just a step further with the additions of peanut butter, honey and dark chocolate –– three of my major comfort foods. You can also swap out dark chocolate for white chocolate for something a little different, but I think the dark chocolate is a nice balance to the sweetness of just about everything else in this recipe.

 

Notes:

– I used a G by Godiva dark chocolate bar.
– I used Brandless creamy peanut butter.
– I used honey from Hutchinson's Farm.

Peanut Butter & Honey Blondies with Dark Chocolate
A simple recipe for peanut butter blondies with a touch of honey and dark chocolate.
Ingredients
  • 1/4 cup, melted unsalted butter
  • 1/4 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1/4 cup peanut butter
  • 1/4 cup honey
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 6 squares, finely chopped dark chocolate
Instructions
1. Preheat the oven to 350ºF. Prepare an 8x8" baking dish with foil or parchment paper and lightly butter or grease.2. Mix melted butter and sugars until well combined. Add vanilla extract and egg. Make sure the butter is not hot when adding the egg, or it will cook.3. Add peanut butter and honey to the wet mixture and thoroughly mix.4. Combine dry ingredients with the wet mixture until all ingredients are well combined. Add the chocolate last and mix by hand.5. Transfer your batter to the baking dish and use a spatula to ensure the batter is even.6. Bake for 20-25 minutes, or until toothpick comes out clean.
