No-Marshmallow Rice Krispie Treats

I had the Rice Krispies, I had the craving, but I didn't have the marshmallows. What was I going to do... leave the house on a cold, rainy afternoon? So, I did an experiment that resulted in a shockingly delicious treat: no-marshmallow Rice Krispie treats. There are a few more ingredients than a traditional Rice Krispie treat, but who doesn't like a little challenge?

The chocolate is completely optional in this recipe–– I added it because in case you can't tell, I love chocolate. This only creates a small batch, but if you double the recipe you'll have double the delectables. The best part about these no-marshmallow Rice Krispie treats? They take five minutes to make... and less than five to eat. It took every bit of strength in me to save some for Kenneth to try!

No-Marshmallow Rice Krispie Treats

A simple recipe for Rice Krispie treats without marshmallows. Fast to prepare, even faster to devour.

Ingredients

  • 1 tbsp unsalted butter

  • 1 tbsp honey

  • 3 tbsp light corn syrup

  • 3 1/2 tsp light brown sugar

  • 1/4 tsp ground cinnamon

  • 1/4 tsp vanilla extract

  • salt, to taste

  • 1 cup rice krispies

  • 1 tbsp chocolate chips (optional)

Instructions

1. In a medium sauce pan, melt together butter, honey, light corn syrup, sugar, cinnamon and bring to a boil.

2. Stir continuously for about one minute and remove from heat.

3. Add vanilla extract and stir.

4. Add rice krispies, and chocolate chips if want chocolate treats.

5. Spread into a small non-stick pan and let set in fridge.
