Lava Cake with Raspberry Sorbet

Is there any flavor combination more rich and perfect than chocolate and raspberryNo, no there isn't. Although this lava cake can really be paired with whatever flavor of ice cream you fancy, there's something about raspberry sorbet and lava cake that really hits the spot for me.

That is no way to eat lava cake. It must be treated like royalty. So, I had to make my own and take beautiful pictures of it to cleanse my soul and make things right with the lava cake gods.

This easy recipe for lava cake is simple and flavorful. It's best served warm, so if you're planning to serve with ice cream–– eat quickly! The sweetness of the raspberry on this lava cake also blends well with the rich, dark chocolate.

It will yield four ramekins, so perfect for a small gathering... or extra dessert for date night... or four cakes for yourself. Really, whatever floats your boat. There are no wrong answers when it comes to lava cake.

Lava Cake with Raspberry Sorbet
Ingredients
  • 1/2 cup butter
  • 2 oz bittersweet baker's chocolate
  • 2 oz semi-sweet baker's chocolate
  • 1 1/4 cups confectioner's sugar
  • 2 large eggs
  • 3 egg yolks
  • 1 tsp vanilla extract
  • 1 tbsp extra dark cocoa powder
  • 1/4 cup + 3 tbsp all-purpose flour
  • 1/4 tsp kosher salt
  • raspberry sorbet
Instructions
1. Preheat oven to 425ºF and butter or spray 4 ramekins.2. Melt together butter, bittersweet chocolate and semi-sweet chocolate until smooth, using the microwave at 20 second intervals or a double-boiler.3. Stir in confectioner's sugar until well-blended.4. When chocolate mixture is slightly cooler, add eggs and egg yolks, one at a time. Add vanilla.5. Whisk together flour, cocoa powder and salt in a separate bowl and add to wet ingredients. Divide mixture between ramekins.6. Bake for 12-14 minutes, or until tops of cakes look formed.7. Remove from oven and let cool for one minute before inverting onto plates. Serve warm with sorbet.
