Soft Chocolate Ginger Cookies

I am clearly having a bit of a moment with ginger and chocolate. I just think they're the best cold weather combination. This recipe for soft chocolate ginger cookies took a bit of last minute improv... but they look good and taste good, and that's what matters.

When I started pulling out my baking equipment and ingredients, I realized pretty quickly that I was missing a few things that I had originally intended to make the cookies with. Did I... run out to the store and get what was needed, or did I improvise because it was 11ºF outside? (I'm pretty sure you can guess.)

These cookies bake quite soft inside and are very dense. I didn't have them, but I'd recommend throwing in about half a cup of chocolate chips as well. Also optional –– whipping together some whipped cream and making gingery whoopie pies!

Soft Chocolate Ginger Cookies

Ingredients
  • 6 tbsp butter
  • 6 tbsp Dutch-process cocoa powder
  • 1 1/2 cups all-purpose flour
  • additional 1/2 cup Dutch-process cocoa powder
  • 2 tsp fresh ginger, grated
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 tbsp, finely chopped candied ginger
  • (optional) 1/2 cup bittersweet chocolate chips
Instructions
1. Preheat the oven to 325º and prepare cookie sheets.2. In a small pan on low heat, begin melting the butter and add 6 tbsp of cocoa powder. Melt together, then remove from heat.3. Whisk together the flour, additional cocoa, spices, salt, and baking powder. Set aside.4. Combine the sugar, maple syrup, vanilla, and eggs.5. Add the cooled chocolate and butter until combined.6. Slowly add the dry ingredients to the mixture until well combined.7. Stir in candied ginger and (optional) chocolate chips.8. Use a tablespoon to scoop the batter onto the cookie sheets. The shapes will flatten out in the oven.9. Bake cookies for 12 minutes, then let cool on the sheets for a few minutes before transferring to a wire rack.
